Iron Rations: A Simple and Healthy Breakfast
Eggs. The staple of so many people’s morning ritual.
Unfortunately these miraculous packages of protein and amino acids are often partnered up with stacks of pancakes slathered in butter and sugar sauce, southern biscuits soaked in heart-attack inducing gravy, covered in tons of cheese, etc…
Since everyone knows that “breakfast is the most important meal of the day” (Thanks non-stop 1980s TV advertising), and we all should be aware that shoveling piles of empty carbs and buckets of cholesterol into our faces is not the way to treat our bodies, then it is a simple conclusion that we want to partake in a healthy meal to start our day. Right?
So rather than waking up and immediately punching your metabolism in the throat with a maple syrup covered fist, how about you start the day off right and eat one of my personal favorite 5 minute healthy breakfasts instead?
Eggs w/ Sautéed Spinach
I know the phrases “5 minute” and “healthy” probably seem to be in conflict with each other; in a lot of people’s minds, Fast Ave. does not intersect with Healthy Blvd. When people think of a fast breakfast they think Poptarts (I shudder at the thought) or a bowl of cereal, not a hot filling meal that starts the day off with a healthy dose of protein and an assortment of vitamins and minerals.
Trust me, it is quick and easy; here is how you whip this up!
The ingredient list could not be simpler; 2-3 eggs and some raw spinach.
That’s it.
Since I know you all are stocking your kitchen with these two healthy essential ingredients (you are keeping these kitchen essentials in your house at all times, right Jerdlings?) this should be a snap!
Step #1: Crack 2 eggs, one directly into your non-stick frying pan and the other through your egg separator first (if you are lazy you can always go the whole “liquid egg whites in a carton” route too). While there is no real substance to the old thought that egg yolks are bad for you, they do add calories to your meal that a lot of people don’t want or need. Like most things in life, I prefer what I view a healthy balance. So I like to leave one yolk in my eggs for taste, minerals and essential fatty acids and then use egg whites for the remainder of the recipe.
Fire up the stove top range to medium heat and season the eggs to taste. I stay away from adding salt; instead I do like to grind some fresh black pepper over them.
In about a minute the eggs whites will start turning, well… white; then it is on to the next step.
Step #2: Dump a crapload of spinach into the frying pan.
Seriously. A crapload.
I use half a bag (approx 2 cups) and fill the pan to overflowing.
The thing about spinach is that it cooks down really fast. So take a spatula and stir it around, breaking up the egg as you go. By the time the egg underneath is fully cooked, the spinach will look like it shrank 400%.
Once the egg is fully cooked, slide it off onto a plate!
Step #3: Om nom nom nom.
So there you have it; a 5 minute healthy breakfast!
Sometimes I like to add a splash of hot sauce, some Sriracha, or a couple of spoonfuls of fresh salsa to liven it up. Just remember to only add healthy ingredients and/or toppings!
The best thing about this recipe is that the ingredients don’t cost much at all and it all adds up to around 100 calories while giving you a healthy dose of protein, vitamins A & C and iron to start your day off right!

Seems simple enough, i’ll give it a shot. Not the biggest breakfast fan, but I’ve definitely seen how a change in what you eat can and will effect the performance of everyday life (I.E on the mats). I spent some time juicing Kale, Spinach, Ginger, Lemon, Apples, Cucumbers, and Bak-Choi and for the duration of time that I was doing it I felt like an animal (in a good way). Was very time consuming so eventually I got bored with it, but this seems easy enough since its only 5 minutes (i’m really hoping FIVE here!).
